Casa Silva S38 Single Block Los Lingues Cabernet Sauvignon 2022

Casa Silva S38 Single Block Cabernet Sauvignon is a refined, terroir-driven red from the Los Lingues vineyard in Chile's Colchagua Valley. Sourced from a single, precisely defined block at the foothills of the Andes, it is a wine of exceptional structure, complexity, and elegance that showcases Cabernet Sauvignon at its Chilean finest. Why You'll Love It The S38 designation refers to a specific single block within the Los Lingues estate, selected for its unique microclimate and soil profile at the northeastern edge of the Colchagua Valley. Casa Silva is a family-owned winery with a long-standing reputation for producing wines of genuine terroir expression, and this bottling represents the pinnacle of their Cabernet Sauvignon work. With 12 months in French oak and a further 6 months of bottle ageing before release, this is a wine built for the long term, though it is already a pleasure to drink now. Vineyard & Production Grapes are hand-harvested, chilled, and carefully selected before fermentation. A 10-day cold maceration is followed by alcoholic fermentation at 26 to 28 degrees, with post-fermentation maceration monitored daily to achieve optimum extraction. Malolactic fermentation takes place in barrel, with 80% of the wine aged for 12 months in French oak and 20% in stainless steel. A further 6 months of bottle ageing precedes release, ensuring integration and polish before the wine reaches the glass. Tasting Notes Ruby red in colour with attractive violet tints. The nose is complex and inviting, with aromas of plum, blackberry, and ripe blackcurrant alongside notes of vanilla, leather, eucalyptus, and tobacco. On the palate, medium to full-bodied with medium-high acidity, abundant ripe tannins, and a long, elegant, structured finish. Serve at 16 to 18 degrees. Drink now or cellar for up to 15 years. Perfect Pairings A natural partner for grilled and roasted red meats, particularly veal loin and beef fillet. Also excellent alongside roasted or layered vegetables
