Production Fruit is sourced primarily from De Bortoli's own vineyards in the Riverina, as well as long-standing growers who cultivate Botrytis Semillon specifically for the estate. Following a warm, dry summer, rain in early May and foggy mornings encouraged noble rot to develop, concentrating flavour and sweetness in the berries. Each vineyard parcel is harvested, fermented, and matured separately to preserve its character and complexity. Around 20% of the wine is fermented in French oak, with the remainder kept unoaked to highlight fruit purity and freshness.
