Champagne Billecart-Salmon, Brut Rosé, - Half NV

Billecart-Salmon's Brut Rosé is one of the benchmarks of the style; it is a wine that has earned its reputation not through marketing muscle but through consistent, disarming elegance. Made from a blend of Pinot Noir, Meunier, and Chardonnay, with a small addition of still red wine from Mareuil-sur-Aÿ giving it that signature pale onion-skin blush, this is Champagne that prioritises precision over power. The perlage is impossibly fine, the mousse gentle, and the whole thing feels like it was designed to make you pause mid-conversation. This half-bottle format is ideal for two glasses of something special - an aperitif with real intent, or the kind of thing you open mid-week when the occasion is simply that Tuesday felt long enough.

Gremillet Blanc de Blanc Champagne Brut NV

Champagne Gremillet was founded by Jean-Michel Gremillet in 1979 and is situated in the southern Aube, near Troyes, where the vineyards achieve a richer, more characterful style of Champagne . The Blanc de Blancs is a pure Chardonnay cuvee of real class and distinction, awarded Gold at the Decanter World Wine Awards 2023, and crafted by winemaker Jean-Christophe Gremillet with meticulous attention to detail. Why You'll Love It This is Blanc de Blancs Champagne at its most refined. A blend of four to five vintages with 20% reserve wine, it offers the complexity and depth of a prestige cuvee at a very approachable price. The extended lees ageing of 30 to 36 months adds a beautifully creamy, toasty character that sets it apart. Sustainable and Gold medal awarded. Vineyard and Production. Composed entirely of the cuvee, the first and finest press. Cool alcoholic and malolactic fermentations take place in temperature-controlled vats. Once in bottle, ageing lasts for 30 to 36 months. The brut dosage is 9g/l, with the liqueur d'expedition sourced from finished bottles of Champagne, ensuring perfect integration and freshness. Tasting Notes. Creamy aromas combined with characteristic toasty yeast overtones, complemented by ripe mature fruit and classic baked biscuit flavours. The finish is long, classy and beautifully sustained. Perfect Pairings. An excellent match for scallops and grilled turbot. Also well suited as an aperitif with olives and charcuterie, or alongside soft cheeses and smoked salmon. Grape Varieties. Chardonnay
