This is an exclusive blend of a third of each of the grape varieties, which is matured for a minimum of 18 months before release. The grapes come from vineyards on the chalky soils of the Côte de Sézanne.

Penfolds Bin 311 Chardonnay 2020 is a cool-climate Chardonnay sourced primarily from Tasmania, Piccadilly and Henty, with fruit selected to reflect a leaner, precision-driven style aligned with Penfolds’ white-wine program. The wine is fermented and matured for around eight months in French oak barriques, 41 % new, with minimal filtration. Alcohol sits at approximately 13 %, with high natural acidity and low pH contributing to its tension and structure. The profile is dry and medium-bodied, showing citrus and stone-fruit flavours supported by subtle lees character and restrained oak. Acidity is a defining feature, giving the wine a linear, mineral feel and a persistent finish. Bin 311 2020 is approachable now but has the balance and concentration to develop well over the medium term.
