Vineyard & Production The base wines are sourced from carefully selected vineyards across the Cotes de Nuits, Cotes de Beaune, and Cote Chalonnaise, where limestone, marl, and granite soils contribute freshness and mineral precision. Grapes are pressed immediately on arrival at the winery, fermented in stainless steel at 18 degrees, then bottled for a second fermentation and aged for 12 months sur latte before disgorgement. The result is a wine of real finesse and character. Tasting Notes A delicate pale powdery pink in colour with fine, regular bubbles. The nose is bright and inviting, with lemon, grapefruit, and a lift of red fruits including redcurrant.
