Chateau Fabre Gasparets Chimere Viognier Organic 2023
This wonderful Viognier has been produced from organically farmed fruit which was planted in the 1990s from vines sourced from Condrieu. Harvested when fully ripe, they are picked at night to preserve their freshness and aromas. The wine is then fermented and aged in 225 litre French oak for 6 months with regular battonage. Brilliant golden hue, this wine is intensely flavoured with notes of candied citrus fruits, marmalade, peach and roasted almonds. Food Match: Opulent and intensely flavoured dishes such a tagine with apricots and preserved lemon The Fabre Family have been producing wine in one way or another for over four hundred years. In 1711, the family settled in Gasparets, near Narbonne, in the Aude department of France. Louis Fabre is head of the family concern, which now includes five estates, having taken the reins in 1982. From 2014 he has been joined by a new generation, his daughters and niece: Clémence, Paule and Jeanne, respectively in charge of export sales, accounting and oenotourism.Since 1991, Famille Fabre has been converted to organic viticulture and today 100% of its vineyards are certified organic, producing concentrated, flavoursome wines with genuine provenance.
Clos de Gat Chardonnay 2023
Clos de Gat Chardonnay is crafted at the estate's vineyards in the Ayalon Valley, nestled in the foothills of the Judean Mountains in Israel. Founded in 1998 by owner-winemaker Eyal Rotem around an ancient Roman-era wine press, Clos de Gat produces wines of genuine elegance and terroir-driven character — and this Chardonnay is a compelling example of what Israeli white wine can achieve. Why You'll Love It This is Israeli Chardonnay at its most refined — fresh, precise, and beautifully balanced. Rotem's meticulous approach in the vineyard and winery results in a white wine that rivals the best of Burgundy in its harmony of fruit, acidity, and oak. A genuine discovery for lovers of serious, food-friendly Chardonnay. Vineyard & Production Grown on limestone-rich soils under a Mediterranean climate in the Judean foothills, the Chardonnay grapes are carefully selected and vinified with precision to preserve aromatic purity and natural acidity. Gentle oak ageing adds texture and complexity, creating a harmonious balance between vibrant fruit and subtle oak influence without overpowering the wine's inherent freshness. Tasting Notes Pale gold in the glass, the Clos de Gat Chardonnay opens with an elegant, complex nose of citrus fruits, orange blossom, and delicate spice. On the palate it is fresh and lively, with beautifully integrated acidity, a creamy mid-palate, and a long, lingering finish. Perfect Pairings A versatile food wine — excellent with grilled or roasted fish, roast chicken, creamy pasta dishes, and soft or semi-hard cheeses. Also a natural match for Middle Eastern mezze and vegetable-based dishes. The Grape Chardonnay 100% — Judean Mountains, Israel
