Larry Cherubino Uovo Cabernet Touriga 2021
Larry Cherubino Uovo Cabernet Touriga is a distinctive blend combining Cabernet Sauvignon with Touriga Nacional, a Portuguese grape known for its intense colour and flavours. Made in a clay cement ovoid tank (a giant "egg") from Frankland River, this full-bodied wine showcases firm tannins, good acidity, and exceptional ageing potential with notes of dark fruit, blackberry, black cherry, spice, and tobacco. Why You'll Love It This is innovative Australian winemaking—rich, full-bodied, and beautifully crafted using a unique clay cement ovoid tank. Crafted by acclaimed winemaker Larry Cherubino, the Uovo (Italian for "egg") fermentation creates an internal vortex that continuously forces lees upward, giving the wine voluptuousness, purity, and texture. From the exceptional 2021 vintage in Frankland River with rainfall at just the right times, this wine uses zero sulphur throughout winemaking (minimal at bottling only) with no added tannin, acid, or animal fining products, offering exceptional quality and distinctive character.
