Les Griffons de Pichon Baron is one of the second wines of the property. Created since the 2012 vintage, it has a pure and direct character. The grapes which make up this wine's blend come primarily from gravelly plots of land near to the Gironde estuary, a good environment for Cabernet Sauvignon. Les Griffons offers a vigorous and fresh tasting experience, full-bodied and clean, overflowing with energy. It can be laid down in the cellar for over 20 years or enjoyed right away.

In 1989, Paul Hobbs visited Mendoza for the first time, crossing the Andes from Chile and instantly falling in love with the region, its people, and its potential for world-class wine. Inspired by the terroir, he began experimenting with wild-fermented Chardonnay and eventually with Malbec, Argentina’s flagship variety. His first 10-barrel vintage of Malbec captured the attention of the American press, demonstrating the grape’s potential. In 1999, Paul established Viña Cobos , where he continues to craft wines that reflect the character of Mendoza’s most distinguished regions, Luján de Cuyo and Valle de Uco. His elegant and balanced wines result from meticulous vineyard management and deep respect for terroir. Viticulture The fruit for this wine comes from Luján de Cuyo, Mendoza’s historic prime wine-growing zone. Vineyards are situated at elevations of 3,250–3,470 ft in a semi-desert climate, with low-nutrient, gravelly soils ideal for producing concentrated, high-quality grapes. All grapes are hand-harvested to ensure optimum ripeness and selection. Winemaking Grapes are aged for 18 months in French oak barrels, 25% of which are new. Each lot is harvested and vinified separately to maintain terroir expression, with the final blend determined after aging. The wine is bottled unfined to preserve purity and complexity. Tasting Note Deep ruby with dark undertones, this Cabernet Sauvignon displays aromas of pink pepper, black fruits, and subtle spices. The palate is rich and structured, with sweet, juicy tannins, balanced acidity, and a long, persistent finish. Food Matching Pairs beautifully with crushed black peppercorn steak, blue cheeses, and desserts featuring red fruits.
