The Le 2 de Romer du Hayot is a beautifully judged, modern take on Sauternes - all the luscious charm you’d hope for, but with a lovely sense of freshness and lift. In the glass, ripe apricot, peach compote and candied citrus peel, with a touch of acacia honey and a fresh citrus edge. It's sweet, of course, but beautifully balanced; the acidity keeps it lively and stops it ever feeling heavy. A classic partner to tarte tatin or blue cheese, but the Le 2 is just as good slightly chilled on its own. The vineyards sit on classic clay-limestone and gravel soils, giving both richness and structure. The blend is 90% Sémillon, bringing texture and honeyed depth, with 10% Sauvignon adding a little aromatic zip and brightness.

Quady Wines specialises in dessert wines and has built a worldwide reputation for producing elegant and expressive sweet wines. Founded by Andrew Quady, the winery’s expertise spans Portuguese varietals, Muscats, and inventive dessert wines. Vineyard The Black Muscat grapes are sourced from well-drained, alluvial soils in California. Originally destined for sacramental wine, these grapes were recognised for their exceptional ripeness and character. Winemaking The grapes are crushed, chilled, and macerated to extract delicate aromas and flavours. Fermentation is arrested with neutral grape brandy to preserve the fresh, ripe fruit character. The wine is then aged for three months in small French oak barrels, enhancing its aromatic complexity and texture. Tasting Notes Brilliant crimson-purple in colour, Elysium offers aromas of ripe berries, rose petals, strawberries, and lychee. Vibrant acidity balances the sweetness beautifully, making the wine refreshingly expressive and elegant. Food Pairing Perfect with desserts, fruit tarts, soft cheeses, or enjoyed on its own as a refreshing sweet wine.
