Known for over 5000 years, eaten and used in the pharmacopoeia in the Middle East from where it originated, the highly energizing, digestive and laxative fig is grown throughout the Mediterranean basin. The Egyptians used figs for wine-making, the Gauls from Southern France used them to sweeten their dishes. Serve the Creme de Figue as in Malta, with delicious nougat, or try this recipe for fig salad: Serves 6: Peel 750 g figs and cut into pieces. Place in a large bowl and sprinkle with 3 soup spoonfuls of caster sugar. Add 1 cl Creme de Figues and 1/2 cl Curacao Triple Sec. Cover with aluminium foil and allow to macerate in a cool place for at least 2 hours. Serve iced with as much fresh cream as you like. Aperitif classified as a liqueur wine, Ratafia Briottet is obtained by adding approx. two thirds of fresh Burgundy grape must (before fermentation) with one third of Marc de Bourgogne. Very rustic young, Ratafia mellows with time. Served chilled, Ratafia gives off scents of the Burgundian vineyard in a unique way.
