Handcrafted by winemaker Guillaume Létang for Boutinot , this is Pinot Noir of real finesse and regional identity, inspired by Burgundy but rooted firmly in the unique terroir of the Languedoc's highest vineyards. Vineyard and Production The Haute Vallée de l'Aude benefits from higher altitudes and cool Atlantic breezes filtered through the coastal mountains, moderating the climate and slowing grape ripening to develop complex, refined flavours with elegant structure. Inspired by Burgundy, this Pinot Noir is vinified entirely unoaked to preserve purity, finesse, and varietal character. All viticulture is sustainable, with HVE3 certification. Best served slightly cool to preserve its freshness. Tasting Notes Bright ruby red with upfront aromas of freshly picked raspberries and subtle savoury notes.
