Vineyard and Production The Haute Vallée de l'Aude benefits from higher altitudes and cool Atlantic breezes filtered through the coastal mountains, moderating the climate and slowing grape ripening to develop complex, refined flavours with elegant structure. Inspired by Burgundy, this Pinot Noir is vinified entirely unoaked to preserve purity, finesse, and varietal character. All viticulture is sustainable, with HVE3 certification.
