Clos de Gat Har'El Syrah 2023
Clos de Gat Syrah is an elegant and expressive red wine from the foothills of the Judean Mountains, crafted to showcase the historic vineyards and unique terroir of the region while maintaining freshness and balance. Sourced from estate-grown vineyards planted on thin topsoil over limestone bedrock, it combines traditional winemaking with natural fermentation to produce a layered, complex wine with depth and finesse. Vineyards The grapes come from forty-seven acres (19 hectares) of vineyards overlooking the biblical Ayalon Valley. Hand-picked and rigorously sorted, they benefit from a unique micro-climate that promotes full ripening and concentration, while relying on the vineyard’s natural yeasts for fermentation enhances complexity and expression of the estate’s terroir. Winemaking After crushing, the grapes are transferred to open fermentation tanks. The wine is aged for sixteen months in French oak barrels, 30% of which are new, with racking every four to six months. The final blend is bottled unfiltered, preserving the wine’s richness, depth, and natural character. Tasting Notes Clos de Gat displays a deep, dense purple colour. The nose is intense and complex, with discreet oak influence, warm peppery notes, and aromas of red fruit. On the palate, it is full-bodied, well-balanced, and spicily fresh, with vibrant acidity and integrated tannins. The finish is long, lively, and elegant, highlighting the wine’s structure and finesse. Food Pairing Pairs beautifully with grilled meats, roasted game, or rich Mediterranean dishes. Grape Syrah

Viticulture Iona employs organic practices across its vineyards, with minimal intervention during the growing season. Grapes are hand-harvested to ensure only the best fruit is selected for the wines. Winemaking Grapes are hand-harvested into small crates and spent overnight in a cold room. Extensive hand sorting is carried out prior to destemming, which is performed without crushing. The grapes undergo a cold soak for 5–7 days before natural fermentation in open-top fermenters. Gentle punch downs and pump overs are performed twice daily as required, with fermentation temperatures peaking at 28°C. The wine is then transferred to 300 L French oak barrels, where malolactic fermentation occurs (20% new oak, remainder in 2nd, 3rd, and 4th fill). Maturation lasts 15 months on the lees. Following barrel ageing, wines from Kroon and Beeskamp vineyards are blended 50/50 in stainless steel tanks and clarified naturally for two months before bottling. Tasting Note The wine is perfumed with a floral nose of rose petals, black and red cherries, strawberries, and subtle spice. On the palate it is textured, succulent, and complex, with vibrant acidity and fine-grained, chalky tannins, culminating in a long, savoury finish. A classic, focused Pinot Noir with excellent ageing potential. Food Matching Pairs beautifully with Beef Bo
