Drawing inspiration from his time in the Rhône Valley, specifically working with the legendary Hermitage vineyards of Jaboulet, Keith co-ferments the Shiraz with a trace of Viognier in open vats for four weeks. Regular hand-plunging is employed to gently extract structural tannins and aromatic complexity. The wine is then matured for 20 months in fine French oak barriques, providing a velvety, integrated support that enhances the wine's incredible length.
