Harvested by hand in mid-September, the fruit is carefully sorted and processed immediately upon arrival at the winery to preserve purity. Producing a no-sulphur-added wine requires meticulous hygiene and precision where fermentation is carried out under controlled conditions, with careful pumping over during the early stages. Deep violet-red in colour with brooding blackberry and black olive notes, it offers a unique expression of sustainable winemaking and coastal terroir. The estate is committed to ecological farming practices, biodiversity and minimal intervention winemaking. Their Salvaje range celebrates wild, natural wines crafted without added sulphites, allowing the true character of the vineyard to shine through. Vineyard The Syrah and Roussanne grapes are sourced from La Quebrada Vineyard in the La Vinilla zone of Casablanca, situated 380 metres above sea level in the foothills of the Coastal Mountains. The vines are planted in deep granitic colluvial soils with excellent structure and sandy-loam texture, allowing roots to penetrate deeply. This unique terroir, combined with organic farming methods, produces grapes of exceptional quality and character. Winemaking Grapes are hand-picked into bins, transported to the winery and immediately chilled. A double selection process on conveyor belts ensures only the finest fruit is used. After destemming and crushing, the grapes undergo a 2-day cold maceration at 6–8°C in stainless steel tanks. Alcoholic fermentation follows with native yeasts at controlled temperatures of 20–24°C, with pumpovers managed according to ecological criteria. Malolactic fermentation occurs naturally in stainless steel tanks. The wine is then aged for 5 months—50% in cement egg tanks and 50% in cement truncated cone tanks—before being stabilised without treatments.
