Iona Fynbos Limited Release Monopole Chardonnay is a single-vineyard, wild-yeast fermented Chardonnay of exceptional elegance and complexity from one of South Africa's most exciting cool-climate estates, founded by Andrew Gunn at 420 metres above sea level in the Elgin Valley. Perfumed, mineral and beautifully structured, this is Cape Chardonnay at its most refined and age-worthy. Why You'll Love It Iona is one of Elgin's benchmark estates, farming organically and biodynamically with a focus on soil health and ecological balance, even using geese to manage pests naturally. The long, cool growing season in Elgin, one of South Africa's coldest vineyard regions, allows for the production of wines with real elegance, complexity and a distinctly fresh, mineral character. The Fynbos vineyard, planted in 2003, is a single-site monopole on the eastern side of the farm, producing fruit of remarkable depth and generosity. Limited release and not to be missed. Vineyard & Production The Fynbos vineyard sits on north-facing slopes with well-drained soils rich in clay over decomposed sandstone, with north-south row orientation. Grapes are hand-picked and cooled overnight before whole-bunch pressing with no settling enzymes, allowing more solids to remain in the juice. Fermentation occurs entirely with wild yeasts in 228-litre and 300-litre French oak barrels, 20% new and the remainder in 2nd, 3rd and 4th fill barrels. The wine remains on the lees for 12 months, with 20% undergoing malolactic fermentation and no batonnage. Following racking and blending, the wine is fined and stabilised naturally for three months before bottling.
