Domaine de Vedilhan Serica Viognier 2024

Domaine de Vedilhan Serica is a rich and expressive Viognier from the Languedoc , produced by the Fayet family in Moussan near Narbonne in partnership with Boutinot . With aromas of crystallised orange peel and a palate of ripe stone fruits enhanced by subtle barrel-fermented texture, this is a Viognier of genuine complexity, balance, and satisfaction. Why You'll Love It Boutinot has been collaborating with the Fayet family at Domaine de Vedilhan since 1999, working closely on harvest timing, blends, and vinification style to produce Viognier of exceptional quality. A brook runs around the estate, providing much-needed water in the hot Languedoc climate and giving the wines a freshness and vibrancy that sets them apart. The estate employs lutte raisonnee vineyard management and holds HVE3 certification for sustainable practices. This is Languedoc Viognier at its most refined and expressive. Vineyard and Production The terroir is a combination of limestone, sand, and sea shale, allowing the vines to dig deep for nutrients and produce concentrated, high-quality fruit. Grapes are picked at optimum ripeness, with two-thirds barrel-fermented in mature French oak to add subtle texture and richness without overpowering the fruit. The remaining third is vinified in stainless steel to preserve freshness and aromatic lift. Tasting Notes Aromas of crystallised orange peel with a powerful yet restrained palate. Barrel fermentation enhances texture and richness, allowing ripe stone fruits to shine through. The finish is complex, elegant, and well-balanced, with a lingering warmth that speaks of the terroir. Perfect Pairings Pairs beautifully with seared scallops, pan-fried tiger prawns with garlic, or aromatic Vietnamese dishes. Also excellent with creamy chicken dishes and mild spiced cuisine. San Marzano Timo Vermentino 2025

San Marzano Timo Vermentino is a vibrant, highly aromatic white wine from the sun-drenched vineyards of Salento, Puglia. Crafted by the celebrated Cantine San Marzano, this premium bottling is a distinctive expression of Southern Italy's rugged coastline. Its name is inspired by the wild thyme bushes that line the Ionian shore, reflecting a beautiful, terroir-driven character that brings the spirit of the Mediterranean straight to the glass. Why You'll Love It This is a spectacularly fresh and mineral-driven Vermentino that offers a beautiful alternative to more common Italian white varieties. Produced by a world-class cooperative that seamlessly blends time-honoured Apulian traditions with cutting-edge modern techniques, it captures the raw energy of coastal viticulture. It balances a delightfully exotic floral bouquet with an invigorating, ocean-cooled crispness, making it a luxurious choice for warm-weather entertaining and sophisticated dining. Vineyard & Production The grapes are grown in Brindisi, Salento, where vines are rooted in shallow, sandy soils just 100 metres above sea level, benefiting from warm sunshine tempered by regular sea breezes. Following a careful harvest, the fruit is destemmed and given a brief cold skin soak to extract delicate aromas. A gentle pressing follows, with fermentation taking place in stainless steel tanks at a cool 15 degrees Celsius. The wine is then matured entirely in stainless steel for five months, preserving its pristine freshness, varietal purity, and elegant mineral edge. Tasting Notes Displaying a bright, pale straw colour, this elegant white wine opens with an exotic bouquet of white flowers and zesty citrus, enhanced by distinct herbal notes of wild thyme, rosemary, and crisp green apple. On the palate, it is remarkably refreshing and beautifully structured, combining a vibrant core of stone fruit with a distinct mineral tension. The finish is remarkably clean, showing a lingering, saline-infused zesty lift that bea
