Vineyard & Production Sourced from a single Dillon's Point vineyard where vines are untilled and cover crops are extensive. Sheep graze the vineyard over winter, naturally enriching the soil, while shoot thinning during the growing season ensures optimal sun exposure and ripeness. Ocean proximity provides cooling night-time temperatures, preserving acidity and enhancing minerality. Fruit is harvested mechanically and gently cooled before fermentation in stainless steel, with maturation on fine lees in tank until bottling. Unoaked. Rustenberg Chardonnay is a beautifully crafted, estate-grown white from one of Stellenbosch's most historic and respected producers. Whole-bunch pressed, wild yeast fermented, and aged on lees in French oak, this is a Chardonnay of real elegance and balance — rich enough to impress, yet fresh enough to drink with ease.
