Vineyard & Production Sourced from a single Dillon's Point vineyard where vines are untilled and cover crops are extensive. Sheep graze the vineyard over winter, naturally enriching the soil, while shoot thinning during the growing season ensures optimal sun exposure and ripeness. Ocean proximity provides cooling night-time temperatures, preserving acidity and enhancing minerality. Fruit is harvested mechanically and gently cooled before fermentation in stainless steel, with maturation on fine lees in tank until bottling. Unoaked. Schola Sarmenti Candora Chardonnay is a beautifully expressive white from the sun-soaked vineyards of Salento in southern Italy, capturing the warmth and generosity of Puglia while maintaining a refined balance of freshness, texture and aromatic depth. Full, velvety and elegantly structured, this is southern Italian Chardonnay at its most characterful. Candora is their Chardonnay, crafted from 15-year-old vines trained in the spalliera system with Guyot pruning, with carefully managed yields to ensure fruit concentration and quality.
