The aroma includes bright fruity damsons, plum and spices, balanced with the sweet and toasted notes of wood. The palate is gently appealing blackcurrant, well structured tannins, leaving a persistent flavour including hints of cherry stones. Producer Details Emiliana is one of the worlds most important producers of organic and biodynamic wines and the largest in South America. They have a total of 997 hectares under vine in the valleys of Casablanca, Maipo, Colchagua, and Cachapoal of which 923ha are IMO certified organic and the remaining 77 in conversion. Their spectacular biodynamic vineyard and winery at Los Robles is a model that attracts visiting viticulturalists and winemakers from all over the world. General Manager Jos Guilisasti and winemaking consultant Alvaro Espinoza were key to establishing this project to convert a large commercial winery into a commercially viable organic one. These innovative wines are made with great care and attention and the results are inspiring.

Entrecote Merlot Cabernet Syrah 2024

Les Grands Chais de France Entrecôte is a richly expressive red wine from the Languedoc, showing dense purple-red colour in the glass. The wine offers aromas of wild berries, plum mousse, mulberries and rum pot, complemented by hints of other ripe fruits. On the palate, it is fruity, velvety and smooth, with a lingering finish that reveals subtle mineral notes from the clay and limestone soils. Vinification The wine is crafted from Cabernet Sauvignon, Merlot and Syrah grapes grown on clay and limestone soils. Grapes are hand-harvested at optimal ripeness, sorted and gently crushed before fermentation in temperature-controlled stainless steel tanks. After fermentation, the wine is aged on its fine lees for several months to enhance texture and complexity before bottling. Tasting notes Dense purple-red colour with aromas of wild berries, plum mousse and mulberries. The palate is lush and fruity with a velvety texture, rounded tannins, and a long, mineral-tinged finish. Food match Serve at 15–18 °C with lamb stew, Thai cucumber salad, arugula penne, or a classic grilled entrecôte. Grape varieties Cabernet Sauvignon, Merlot, Syrah
