Production Grapes are hand-harvested, with a week-long cold pre-fermentation soak at 8°C to enhance fruit extraction. Alcoholic fermentation occurs between 25°C and 28°C with daily pumpover adjustments based on tasting. Malolactic fermentation happens naturally in stainless steel tanks. 20% of the wine is aged in French oak barrels for six months before blending to achieve complexity and balance.
