Stella Bella Cabernet Sauvignon 2021

This boutique winery in the heart of Margaret River produces distinctively named ranges like Suckfizzle , crafted with a low-intervention, organic ethos that allows their vineyards to express their true quality. Winemaker Luke Jolliffe has earned international recognition for wines that combine Margaret River restraint and elegance with pure, vibrant fruit, resulting in wines that are both refined and highly enjoyable. Viticulture The Cabernet Sauvignon vines are planted on Forest Grove gravelly loam soils—ancient, well-draining soils unique to the Forest Grove area of Southern Margaret River. These soils restrict vine vigour, allowing the fruit to ripen fully while remaining cool in the afternoon sea breezes from the Southern and Indian Oceans. The Stella Bella Cabernet is a blend from five Southern Margaret River vineyards, with vines aged between 28 and 45 years. Winemaking The Cabernet is harvested at optimal ripeness to enhance violet perfume and red and blue fruit character. Fruit is handled gently, with minimal maceration to preserve whole berries and achieve a pseudo carbonic maceration. After cold soaking, fermentation occurs at approximately 28°C, with pressing guided by aroma, extraction, and desired mouthfeel. The wine is matured in small French oak barriques for up to 12 months, with toast and forest selection tailored to each vineyard’s fruit profile. Tasting Note The wine displays abundant aromas of cranberry, blueberry, and violet, complemented by hints of dark chocolate, plum, and subtle forest floor notes that add savoury complexity. Medium-bodied, vibrant, and supple, the palate showcases bright redcurrant and fresh cranberry, layered with dark plum and delicate vanillin from French oak. Soft cocoa powder tannins contribute length and a salivating finish. Food Matching Pairs beautifully with barbecued veal, lamb rack, or Manchego cheese.
