Moillard-Grivot's Signature cuvée represents the house's commitment to quality, sourcing grapes exclusively from parcels in the prestigious Côte d'Or, grown on limestone soils containing marl and clay. The traditional vinification includes severe sorting, followed by cold maceration for 5 to 7 days to reveal fruity aromas, then long fermentation in thermo-regulated stainless steel vats with piégeages and pumping over.
