Vineyard & Production Grapes are harvested early in the morning by hand and machine from trellis-grown vines aged over 15 years in Weinviertel, on a mix of loess, clay, and granite soils at 230 to 300 metres above sea level. The estate produces its own fertiliser and seeds for cover crops, with young vines protected from dry stress using straw from surrounding fields. After pressing, the must is left in contact with the skins to extract the orange colour and additional flavour compounds, before fermentation in stainless steel tanks with selected yeasts for 15 to 25 days. No malolactic fermentation is carried out, but the wine benefits from eight weeks on the lees before gentle fining and cold stabilisation.
