Vineyard & Production Sourced from vineyards focused in Bolgheri and the neighbouring area of Bibbona, with vines mainly planted on dark soils full of lime and clay. Grapes are handled with particular care, with extremely soft pressing of the bunches to help shorten the maceration process. The three varieties ferment and macerate separately for around 15 days. After 12 months of ageing in oak, they are blended and aged for several months in bottle before release. A structured and age-worthy Cabernet Sauvignon from Kanonkop, showing deep garnet colour with aromas of cedar wood, cigar box, cassis, pencil shavings, bay leaf, and a hint of paprika. The palate is intense, layered with blackcurrant, black cherry, red plums, walnuts, baking spices, creamy vanilla, and cedar wood. Silky tannins and balanced acidity lead to a long, satisfying finish. Vineyard & Terroir Produced to mature gracefully, benefiting from further bottle ageing of up to 20 years. Winemaking Fermented in open top concrete fermenters at 29°C with hand punch downs every 2 hours. Malolactic fermentation completed in 50% new and 50% second-fill 225L French Nevers oak barrels for 24 months.
