Hinch Ninth Wave Irish Gin
Hinch Ninth Wave Irish Gin leans into a bright, contemporary style inspired by Ireland’s coastal landscape, built around a mix of classic botanicals and more aromatic elements. Its aroma shows fresh citrus, clean juniper, soft floral notes and a gentle herbal lift that keeps it lively and modern. On the palate, it offers a smooth, crisp texture with lemon zest, sweet spice, subtle florals and a clean juniper backbone that stays balanced throughout. The finish is light, refreshing and slightly aromatic, making it a versatile gin for bright, citrus‑forward serves or a simple, well‑made G&T.
Santa Ana Gin
Created using Philippine botanicals Ylang-Ylang and Alpinia for delicate floral top notes, in addition to Calamansi and Dalandan for a soft, tropical citrus palate. Santa Ana Gin is made via partial-vacuum distillation, a technique mastered in the Charente region of France. This technique enables the ability to extract a concentration of botanical aromas without degradation by heat. The subtlest of perfumes are extracted with vacuum distillation, which strengthen and become more complex towards the end of distillation. The result of the process is a fragrant, delicious gin utilising even the most sensitive of botanicals, such as Ylang-Ylang or Calamansi.
