Vineyard and Production Each soil type and aspect of the Sauvignon Blanc vineyards is carefully matched with different clones to capture the full range of flavours the variety can express. Blocks are vinified separately using reductive practices and selected yeasts to preserve freshness and aromatic intensity. A small addition of Semillon enhances mid-palate weight and complexity, while lees stirring adds the unmistakable texture that is a hallmark of the Iona style. Tasting Notes Pure white grapefruit, intense tropical fruit, ripe gooseberry, and fleshy kiwi fruit overlay distinctive herbal and floral undertones on the nose. this sauvignon blanc has waves of rich tropical, leaf like notes on the nose that sway to a broad palate of tight lime-leaf, bay and a silk like texture while remaining super-bright, naturally acid finish. From older vines that cling to Simonsberg in the tiny, mountainous ward of Banhoek within Stellenbosch. Dry grown vines grow thin and weedy on these vertigionous slopes.
