Production The grapes were hand-harvested into bins in the cool of the morning, then whole-bunch pressed with only the best cuvée juice used for the final blend. A selected yeast strain was used for primary fermentation, with no malolactic fermentation permitted to ensure freshness. The wine was blended, bottled and underwent secondary fermentation in the bottle, followed by approximately 48 months of lees ageing before disgorgement.
