Larry Cherubino Laissez Faire Syrah is a minimal intervention wine from the exceptional Frankland River region in Great Southern, Western Australia. As the name suggests, no acid, enzymes or yeast were used in the making of this wine only natural fermentation and careful winemaking. A bouquet of earth, black cherries and spices with a subtle mineral/slate quality, oak providing support. Red flowery fruit flavours dominate, with subtle slate-like minerality, all framed by a light structure and fine tannins. Production Grapes are hand-harvested from Block No. 4 of the Pyros Vineyard. After careful selection, fermentation takes place in small stainless steel tanks with regular pump-overs to extract colour and fine tannins. The wine is then aged for 12 months in French oak barrels (50% new), followed by an additional 6 months of bottle ageing before release.
