Larry Cherubino Uovo Cabernet Touriga 2021

Larry Cherubino Uovo Cabernet Touriga is a distinctive blend combining Cabernet Sauvignon with Touriga Nacional, a Portuguese grape known for its intense colour and flavours. Made in a clay cement ovoid tank (a giant "egg") from Frankland River, this full-bodied wine showcases firm tannins, good acidity, and exceptional ageing potential with notes of dark fruit, blackberry, black cherry, spice, and tobacco. Why You'll Love It This is innovative Australian winemaking—rich, full-bodied, and beautifully crafted using a unique clay cement ovoid tank. Crafted by acclaimed winemaker Larry Cherubino, the Uovo (Italian for "egg") fermentation creates an internal vortex that continuously forces lees upward, giving the wine voluptuousness, purity, and texture. From the exceptional 2021 vintage in Frankland River with rainfall at just the right times, this wine uses zero sulphur throughout winemaking (minimal at bottling only) with no added tannin, acid, or animal fining products, offering exceptional quality and distinctive character. Schola Sarmenti Cubardi Primitivo 2023

A profound and elegant Primitivo born from 65-year-old bush-trained vines deeply rooted in the red soils of Salento. This is a wine of heritage and power, crafted with precision and respect for tradition. Vineyard & Production The old vines are trained in the Alberello Pugliese system at a density of 4,500 plants per hectare, yielding just 900 to 1,100 grams per plant. Grapes are hand-picked and carefully placed into airy crates before vinification. The wine is aged for six months in French oak tonneaux and a further eight months in bottle, allowing structure and depth to harmonise beautifully. Tasting Notes From these venerable vines comes a Primitivo that expresses authenticity and finesse. The bouquet reveals intense notes of ripe fruit, with inviting hints of tobacco, followed by a soft finish of chocolate and coffee. On the palate, it is velvety and enveloping, with gently expanding tannins that lend persistence and grace. The texture is rich yet airy, leaving a long and memorable impression that speaks of the wine’s strong personality. Food Match Ideal with braised meats, mature cheeses, or rich game dishes.
