Larry Cherubino Uovo Nebbiolo Cabernet 2023

Larry Cherubino Uovo Nebbiolo Cabernet is an innovative blend combining Cabernet Sauvignon with Nebbiolo, crafted in a clay cement ovoid tank known as a giant "egg." The unique fermentation creates an internal vortex that continuously forces lees upward, giving the wine voluptuousness, purity, and texture with fine tannins, bright acidity, bay leaf, and blackcurrants leading to a long and moreish finish. Why You'll Love It This is innovative Australian winemaking at its finest—distinctive, elegant, and beautifully crafted using a unique clay cement ovoid tank. Crafted by acclaimed winemaker Larry Cherubino, the Uovo (Italian for "egg") fermentation creates an internal vortex that gives the wine exceptional voluptuousness, purity, and texture. The blend of Cabernet Sauvignon with Nebbiolo creates a wine with both structure and elegance, combining Cabernet's power with Nebbiolo's finesse and aromatic complexity, offering outstanding quality and distinctive character. Vineyard & Production Sourced from Western Australian vineyards. Made in a clay cement ovoid tank where lees are continuously forced upward by an internal vortex, giving the wine voluptuousness, purity, and texture. This innovative winemaking technique preserves the distinctive character of both Cabernet Sauvignon and Nebbiolo while creating exceptional integration. Tasting Notes Fine tannins with bright acidity. Aromas and flavours of bay leaf and blackcurrants. The finish is long and moreish with excellent balance and complexity. Perfect Pairings Perfect with grilled steak, roasted lamb, aged cheeses, or rich Italian cuisine. Also excellent with venison, duck breast, or hearty pasta dishes. Grape Variety 85% Cabernet Sauvignon, 15% Nebbiolo

Schola Sarmenti Cubardi Primitivo 2023

A profound and elegant Primitivo born from 65-year-old bush-trained vines deeply rooted in the red soils of Salento. This is a wine of heritage and power, crafted with precision and respect for tradition. Vineyard & Production The old vines are trained in the Alberello Pugliese system at a density of 4,500 plants per hectare, yielding just 900 to 1,100 grams per plant. Grapes are hand-picked and carefully placed into airy crates before vinification. The wine is aged for six months in French oak tonneaux and a further eight months in bottle, allowing structure and depth to harmonise beautifully. Tasting Notes From these venerable vines comes a Primitivo that expresses authenticity and finesse. The bouquet reveals intense notes of ripe fruit, with inviting hints of tobacco, followed by a soft finish of chocolate and coffee. On the palate, it is velvety and enveloping, with gently expanding tannins that lend persistence and grace. The texture is rich yet airy, leaving a long and memorable impression that speaks of the wine’s strong personality. Food Match Ideal with braised meats, mature cheeses, or rich game dishes. Grape Primitivo 100%
