Sotol La Higera Cedrosanum
Sotol La Higuera Cedrosanum has mineral and caramel notes on the nose with smoked grass and cedar on the palate. The finish is dry and the texture is balanced. Sotol is not distilled from agave, but from the Sotol plant or desert spoon. The most common sotol varietal is Dasylirion wheeleri, Asparagaceae, a plant that grows wild throughout the Southwestern United States and Northern Mexico.
