The palate is structured with fine tannin and a balanced fruit/oak/spice finish. A slight choc mintiness is perceived on the finish which is a hallmark of Coonawarra.

Production Grapes are hand-picked in the early morning, carefully destemmed to preserve whole berries, and fermented in small, open-top tanks. Punch-downs are performed three times daily to gently extract colour and tannins. A portion of the must undergoes spontaneous fermentation with native vineyard yeasts, while other lots are inoculated with select Burgundian strains. Following fermentation, the wine is pressed into stainless steel for settling, then aged for 15 months in 100% French oak barrels (35% new). The final blend comprises only the top barrels, ensuring depth, elegance, and complexity.
