MACÉRATION Rosé Extra Brut Grand Cru Ambonnay Champagne Rodez NV

Certified organic (Ecocert), and biodynamic (Demeter). Tirage 2019, disgorged January 2024. Bright coral pink and it smells patisserie-seductive, like a white-chocolate macaron. But it's dry, serious and not at all playful – this is a serious rosé. It feels like scrunched-up taffeta, and tastes of blood-orange, bruised rose hips and autumn leaves. Fine and compact with a long, clinging finish, taut as a bowstring.

Jean-Paul Hebrart crafted this blanc de noirs cuvée first from the 2012 harvest, and he makes it only in the very best of Pinot Noir years. The 2019 iteration is one of very finest yet, a year when Grand Cru Aÿ lieux-dits Cheuzelles, Longchamps, Pierre Robert, Pruche and Chauffour made it to the blend. Brightly shiny, pristine fruit on the expressive nose, all on vibrant red fruit. On the palate, it holds back some more, bringing forward its impeccable concentration and built-to-last structure.
