Mermaid Pink Gin
Mermaid Pink Gin hails from Isle of Wight and was first produced back in 2014. The Pink Gin offers hand foraged and sustainable ingredients such as rock samphire, elderflower, grains of paradise, lemon and has the addition of juicy English Strawberries! The Isle of Wight Distillery was founded by two chaps, Xavier and Conrad - One was a brewer and one was a winemaker, their approach is to cut the gin at the perfect moment where they capture the 'hearts' of each batch. Trevethan Honey Oak Cornish Gin
Trevethan Honey Oak Cornish Gin has a very subtle honey oak flavour. The oak and Cornish honey helps to enhance the earthy juniper, citrus and floral notes that this Trevethan gin offers. Whilst there are other oak gins on the market, most of them have been barrel aged – similar to the ageing of whisky. This changes the flavour profile from a gin, with its botanical notes, to a more tannin flavoured spirit like. Trevethan’s honey oak gin has been created through a novel steeping process. This process involves using “green” Cornish oak blocks from the heart of the tree; this is where most of the natural sugars and tannin reside. The blocks are immersed in Cornish honey for a period allowing the wood to draw in the honey flavour. The oak is then decanted out of the honey and left to steep in Trevethan Cornish gin. Over a period of 6-8 weeks the gin starts to colour up with the diffusion of honey and oak tannin and natural sugars being released from the wood. Fever-Tree’s clementine & cinnamon tonic goes very well with this honey oak gin but as this is a limited edition tonic, Fever-Tree’s Mediterranean tonic would also work well. Garnishes can include apple and ginger, apple and cherry or apple and cranberry. This gin is also delicious as a warm toddy on cold winter evenings. Warm mulled apple juice and add the gin with a slice of ginger and apple. It also serves very well on its own with ice.
