Production Fruit is carefully sorted, destemmed and crushed before fermentation in stainless steel tanks at warm temperatures. Gentle punch downs are performed several times daily to extract colour and flavour. Once fermentation is complete, the wine is pressed and allowed to settle before racking for oak ageing. The wine is aged for 10 months in French oak with 25% new barrels, imparting delicate notes of vanilla and toast while enhancing structure and complexity.
