Vineyard & Production The vineyards are planted on elevated sites with clay and limestone soils in the Florensac terroir, farmed sustainably without chemical intervention. To protect the grapes' delicate aromatics, harvesting takes place at night when temperatures are cooler, preventing oxidation and preserving fruit integrity. After gentle pneumatic pressing, fermentation takes place in stainless steel at low temperatures using cultured yeasts. The wine is then aged on fine lees with regular stirring to enhance richness and roundness. Natural pest management and solar-powered refrigeration complete a genuinely green production process.
