Paul Cluver Riesling shows a pale green hue with expressive aromas of citrus blossom and fresh orchard fruit. The palate is delicate yet zesty, with lime notes and a textured mid-palate. A balance of natural residual sugar and vibrant acidity gives the wine a characteristic Riesling tension, complemented by a mineral core from shale-rich soils. Vineyard & Terroir Sourced from Elgin’s cool-climate vineyards planted on shale-rich soils, lending mineral complexity and structure. Winemaking Grapes are carefully sorted at both vine and cellar. Juice is fermented using selected yeasts, with 22% fermented in large 2500L oval oak vats. Partial fermentation stoppage retains natural off-dry fruitiness. Hand-harvested at optimal ripeness, the grapes are gently pressed and fermented in stainless steel and older French oak barriques, followed by four to eight months on yeast lees.
