The name pays tribute to Mr Pat, a most particular wombat: orphaned, beaten up by his wild wombat mates, taken in by Ballarat Wildlife Park, wheelbarrowed around for weight reasons, and adored the world over. In the farthest flung corners of the Cape lie gnarly, old, national treasures – ancient vines once farmed with Percheron draft horses, both now a rare breed. Percheron Shiraz Mourvèdre celebrates this marriage of nature, capturing the rugged character of the Cape. Co-fermented from select plots across Swartland and Kasteelberg, it combines the bold, peppery intensity of Shiraz with the structured, savoury depth of Mourvèdre, and a whisper of Viognier for aromatic lift, producing a richly flavoured, vibrant, and deeply expressive wine. Production Grapes for Percheron Shiraz Mourvèdre have been sourced from traditional growers in the Swartland area of the Cape. The soil is mainly Malmsbury shale with loamy soil on the higher grounds and sandy loam lower down the slopes, interspersed with rich Hutton soils. The climate is perfect for viticulture with the low rainfall summer months, tempered by cool afternoon breezes and cold winters allowing the vines to rest and build up reserves. This wine is made of 70% Shiraz from the Riebeek Valley, co-fermented with 27% Mourvèdre and 3% Viognier from the Kasteelberg slopes. During fermentation the skin cap is punched down multiple times a day to maximize extraction, resulting in a rich, dark wine packed with fruit and chocolaty notes and a big, savoury heart. Tasting notes Co-fermented Shiraz and Viognier interplay while the later addition of Mourvèdre adds depth and structure. Aromas suggest summer pudding, black cherries, and crushed raspberries, accented by aromatic spice and a subtle creaminess.
