Vuurberg White is an exceptional, elegant white wine from Vuurberg, a boutique garage-style winery in the Western Cape of South Africa . A complex, mountain-grown blend of six varieties led by Chenin Blanc and Viognier , it draws on fruit from Franschhoek , Stellenbosch, Swartland and Paarl to create a wine of real depth, sophistication and sense of place. Grapes are picked early and processed using a combination of crushing, destemming and whole-bunch pressing depending on the variety. All components undergo wild fermentation and mature for nine months on fermentation lees in French barriques and 400-litre barrels, with 25% new oak and full malolactic fermentation.
