Meet the producer Boutinot has been working with growers across California for decades, refining its portfolio vintage by vintage to deliver wines that balance ripe fruit, structure, and accessibility. Production Sourced from vineyards in Northern California’s Central Valley, around Lodi and Manteca, where the San Joaquin and Sacramento river deltas provide cooling breezes that preserve freshness in the fruit. Cabernet blocks are vinified separately and blended for balance, with 6 months ageing in oak to provide a broad frame and subtle chocolate notes. Villa Wolf Pinot Noir is a medium-bodied, approachable red wine from the Pfalz region of Germany. It shows bright black-cherry fruit with juicy, ripe flavours, complemented by a spicy mid-palate and a lingering finish. The wine is balanced with firm acidity and subtle earthy tannins, enhanced by gentle oak aging for depth and complexity. The estate combines traditional winemaking with modern techniques to capture the distinct character of the region while maintaining freshness and structure in its wines. Production The grapes are 100% destemmed and undergo cold maceration before fermentation in stainless steel at 18–20°C. Half of the wine is matured for 15–18 months in French oak barriques (30% new) for depth and complexity, while the other half is kept in stainless steel to preserve freshness.
