The grapes come from 40–80 year old bush vines on steep, rolling mountain sites at the base of cliffs on the northern edge of the Agly Valley near Queribus — true ‘heroic viticulture’ at 240–280m altitude on classic schist and grès (sandy) schist soils. Vines are cultivated organically at the natural limits of each location, unforced and wild. Grapes are hand-harvested slightly earlier than typical for the region to preserve freshness, then wild-fermented with minimal intervention and matured in small concrete vats with no oak, allowing the purity and terroir of Roussillon to shine through.
