Torres Salmos Priorat
Torres Salmos is a powerful, characterful red from the rugged heart of Priorat, one of Spain's most prestigious wine regions. Crafted by Familia Torres from Cariñena and Garnacha , it is a wine shaped by extreme terrain, ancient soils, and centuries of winemaking heritage. Why You'll Love It Priorat is one of only two Spanish regions to hold the coveted DOCa status, and Salmos captures everything that makes it exceptional. Familia Torres, one of Spain's most respected producers, honours the legacy of the Carthusian monks who first cultivated vines here over 800 years ago, while delivering a wine that is unmistakably modern in its precision and polish. This is Priorat at a genuinely accessible price point. Vineyard & Production The vineyards sit on steep slopes of llicorella, the distinctive black slate soil unique to Priorat, which forces vines to dig deep for water and nutrients, concentrating flavour dramatically. Extreme diurnal temperature swings between day and night preserve natural acidity and aromatic complexity. The wine is aged in oak, adding structure and depth without masking the raw intensity of the terroir. Tasting Notes Deep ruby in colour, Salmos opens with aromas of ripe black fruit, balsamic notes, and subtle spice. The palate is powerful yet refined, with concentrated blackberry and plum flavours supported by well-integrated oak. Firm tannins and lively acidity carry through to a long, mineral-tinged finish, a hallmark of the slate soils beneath. Perfect Pairings A natural partner for roasted lamb, game dishes, rich stews, and mature cheeses. Its structure and intensity make it equally at home alongside hearty Mediterranean cuisine or a well-aged cote de boeuf. The Blend Cariñena and Garnacha
Von Siebenthal Carabantes Syrah 2022
Von Siebenthal Carabantes Syrah is a premium Chilean red wine crafted from 85% Syrah and 15% Cabernet Sauvignon. Hailing from the Aconcagua Valley, it reflects the unique terroir of this region, where cool coastal breezes meet the warmth of the Andes foothills. The vineyard’s location on Panquehue’s terraces provides excellent drainage and optimal sun exposure, allowing the grapes to ripen evenly while retaining vibrant acidity. Winemaking The grapes are hand-harvested and undergo fermentation and maceration in stainless steel tanks for approximately 15–20 days at controlled temperatures between 20° and 25°C. After fermentation, the wine is aged in oak barrels for 18 months, enhancing its structure and complexity while preserving the purity of the fruit. This careful balance of oak and varietal character creates a wine that is both elegant and expressive. Tasting Notes Von Siebenthal Carabantes Syrah has a deep ruby colour with a purple rim. The nose is intense and complex, revealing aromas of violet, blueberry, blackberry, rosemary, cracked pepper, dark chocolate, cedar, and a subtle balsamic lift. On the palate, the wine is full-bodied yet poised, with ripe black and blue fruits wrapped in fine, velvety tannins and balanced by refreshing acidity. The oak is seamlessly integrated, leading to a long, precise finish with pepper-spiced nuances. Food Pairing This wine pairs beautifully with herb-crusted lamb, beef short ribs with a soy-black pepper glaze, duck breast with blackberry jus, or aged cheeses such as Manchego. It is a wine that rewards careful pairing, enhancing the flavours of rich, savoury dishes. Serving Temperature Best served at 16–18°C to fully appreciate its aromatic complexity and structured palate. Grape Composition 85% Syrah and 15% Cabernet Sauvignon The name "Carabantes" honours Francisco de Carabantes, a 16th-century Spanish friar credited with introducing Vitis vinifera to Chile, reflecting the wine’s blend of heritage and modern winemaking pre
