About this sparkling wine

Roebuck Estates take a single-minded approach, using only the finest estate-grown grapes from exceptional vineyard sites to craft award-winning wines from classic Champagne varieties. Founded in 2013 by Mike Smith and John Ball near the historic market town of Petworth in West Sussex, the estate reflects their shared passion for wine and belief in the potential of English vineyards. Several years were spent searching for the perfect sites, and today the estate produces elegant, terroir-driven wines that showcase Sussex’s chalk, clay, and sandy soils. Winemaking Only the very best hand-harvested fruit is selected for this flagship wine. Partial fermentation takes place in old Burgundian oak barrels, followed by extended bottle ageing for a minimum of three years, which imparts depth, richness, and complexity. Tasting Note Alluring aromas of baked apples and citrus fruits are layered with a subtle toasty richness. Delicate bubbles and a silky texture on the palate lead to a long, beautifully balanced finish. Viticulture Grapes are sourced from premium Sussex vineyard sites with chalk, clay, and sandy soils. Bunches are handpicked into small buckets, carefully transferred into picking crates, and transported gently to the winery to preserve quality. Food Matching Pairs perfectly with oysters, mussels, or scallops in lemon butter. Awards SWA 2024 GOLD | IWC 2024 GOLD | DWWA 2024 SILVER Technical Details Varieties: Chardonnay 47%, Pinot Noir 42%, Pinot Meunier 11% Oak Ageing: 8 Months, Old Burgundy 225L barrels, 15% oaked, none new
