Ichiro’s Malt Chichibu Distillery II Single Malt Whisky represents the inaugural release from the second Chichibu distillery, introducing a bold and expressive evolution in Japanese whisky craftsmanship. Founded in 2019 by Ichiro Akuto in Saitama Prefecture, approximately 100 kilometres from Tokyo, Chichibu Distillery II builds upon the legacy of its predecessor while embracing innovative production techniques. The new facility features direct-fired wash stills and French oak fermentation vessels, contributing to a richer and more full-bodied spirit that retains the meticulous attention to detail synonymous with the Chichibu name. This first release is aged for four to five years in a selection of casks, with a predominant focus on ex-bourbon barrels. The result is a bright and complex whisky that reflects the emerging house style of Chichibu II. On the nose, it reveals sweet vanilla and caramel aromas, layered with gentle peat smoke and roasted orchard fruits. The palate offers a honeyed texture with flavours of custard, cinnamon and nutmeg, culminating in a long, smoky finish driven by barley and subtle spice. Best enjoyed neat or over ice, this single malt whisky showcases the harmonious blend of tradition and innovation that defines the next chapter of Japanese whisky.
