Vineyard & Production The fruit is grown in the northwest-facing Turtles sub-region on the Amyndeon plateau, situated at an impressive altitude of 670 metres. Here, clay-limestone soils provide excellent drainage, whilst two neighbouring lakes help moderate the continental climate to encourage slow, even ripening. Following careful destemming, the grapes undergo a cold skin contact soak to capture maximum aromatics. The wine is then fermented at gradually increasing temperatures and maintained on its fine lees for two months with regular stirring, imparting a luxurious, creamy weight. Tasting Notes Brilliantly light yellow with subtle greenish tints, this wine opens with a strong, lively nose that is classically characteristic of the grape.
