The Amauta Absoluto Tannat from El Porvenir de Cafayate is a vibrant, high-altitude red wine that offers a delicious alternative to Malbec. Unlike the often austere Tannats of South West France, this version is wild, slightly exotic and wonderfully drinkable, showing both intensity and freshness. Meet the Producer El Porvenir de Cafayate is a small, family-owned winery and one of Salta’s most respected producers. Known for crafting premium yet affordable wines, they specialise in high-altitude vineyards that capture the unique character of the Valle de Cafayate. Production Grapes are grown in the Finca Río Seco vineyards, located 1,700 metres above sea level and surrounded by ancient cacti. The 15-year-old vines yield approximately 7 tonnes per hectare. Harvested by hand in 20kg bins during the third week of April, the fruit undergoes pre-fermentative maceration for 6 days at 4°C, followed by 15 days of fermentation at controlled temperatures (26–28°C) and a further 10 days of post-fermentative maceration. The wine completes its character with a natural malolactic fermentation. Tasting Notes In the glass, this Tannat shows an intense purple colour with aromas of dark raspberry, exotic spice and ripe fig. Despite its depth of colour, the palate is fresh, fluid and elegant, offering flavours of ripe plum, dark cherry compote and subtle minerality, all laced with a distinctive saline thread. Food Pairing A natural match for red meats, especially salt-marsh lamb, chargrilled steak or hearty grilled dishes.
