Pastora is a Manzanilla Pasada from Bodegas Barbadillo, drawn from the historic 'Solear' solera system. Aged two additional years beyond the standard Solear, Pastora develops greater body, depth, and enhanced ‘flor’ character. The final solera stage takes place in Barbadillo’s ‘Pastora’ bodega, giving the wine its distinctive profile. The Pastora brand is considered the oldest Manzanilla label in existence, dating back to shortly after Barbadillo’s foundation in 1821. The 2015 revival aimed to capture the style of 19th-century Manzanilla, presented as a Pasada with minimal filtration, ‘En Rama’. Viticulture & Production Pastora is produced from soleras that date back to Barbadillo’s earliest vintages, carefully maintained to preserve historical authenticity. Minimal filtration ensures the wine retains its natural complexity and character. Tasting Note Pastora exhibits a golden hue with a pronounced yeast character. Aromas and flavours of nuts, chamomile, and subtle flor create a rich, layered experience. The palate is remarkably smooth, displaying a delicate balance of freshness and savoury depth.
