Grapes are hand-harvested and carefully laid on drying racks in ventilated rooms where temperature and humidity are precisely controlled. Over the drying period, the grapes lose approximately 35% of their weight, concentrating the sugars, flavours, and aromas, which results in a wine of remarkable depth, structure, and aromatic intensity. Meet the producer Cantina di Ora is committed to preserving the rich heritage of Valpolicella winemaking, combining meticulous vineyard practices with time-honoured techniques to create wines with elegance, complexity, and ageing potential. Production Grapes are selected and dried on traditional racks, then gently pressed. Fermentation occurs under controlled conditions, followed by a minimum of 12 months ageing in oak barrels to enhance structure, roundness, and integration of flavours.
