Nestled on the western shores of the Étang de Thau — the iconic saltwater lagoon renowned for its premium oysters and mussels — the terraced vineyards of Côtes de Thau rise gently from the coast. These sun-kissed slopes are rooted in limestone clay and red sandstone, creating ideal growing conditions for Mediterranean grape varieties. The nearby sea helps moderate the intense southern French heat, promoting even ripening of Carignan Noir, Grenache, and Syrah. Grapes are carefully harvested at night, destemmed, and gently pressed before undergoing cool-temperature fermentation to retain their vibrant aromas.
