Fermentation takes place in temperature-controlled stainless steel tanks for approximately 15 days at 21 degrees Celsius, followed by a natural malolactic fermentation to soften the acidity and add texture. After resting, the wine undergoes careful racking, fining, and five days of cold stabilisation at -3 degrees Celsius before final filtration and bottling. Tasting Notes In the glass, this Chablis reveals a bright, pale gold colour. The nose opens with restrained aromas of fresh citrus, green apple, and subtle stone fruit, beautifully complemented by a classic chalky, wet-stone mineral character. On the palate, the wine is clear, linear, and impeccably balanced.
